Melted Berry Donut Cake: Sindulgence on a Budget

Ok, so if you have known me for any length of time at all, you know that I am an unadulterated foodie.  Some people choose to be wine snobs; some fast food kings; others choose to be connoisseurs of fine dining, aptly named gourmands.
 
All I care about is food. Good food. 

And since becoming unemployed, that classification has become:  Cheap food with the "good" part taken into assumption.  When you are on a budget or unemployed, the simple pleasures need not all become any less satisfying or exciting.  Long gone are the days of jetting off to the nearest big city in search of my favorite Los Angeles spot for creme brule or to Osaka, Japan for my favorite lavender blueberry cheesecake.

But there is no need to change your tastes to reflect the contents of your bank account.  Here is a  simple, budget-friendly dessert that can be enjoyed for under $1 per serving and just under 140 calories.


Melted Berry Donut Cake
Makes servings: 2
Calories: approximately 140 per serving
Time: 3 minutes
Cost:  $1.00 per serving

1 plain Donut, sandwich- sliced
1/2 cup fresh or frozen berries
1 package of Splenda (optional)
1 tbs Greek Yogurt or melted cream cheese
powdered sugar (to sprinkle on top to taste)

First, slice your plain donut in half.  In a small dish, pour your 1/2 cup of berries into a small microwave-safe dish and microwave (covered) for about 1 minute or until berries are slightly melted into a sauce.  Add your package of Splenda.  I usually buy fresh berries, fruits, and veggies in bulk when they are on sale so as to save for recipes such as this.  For this recipe today, I used frozen blubberries.
Next, strain the berry juice from the solids in your sauce.  Combine the juices with 1 tbs of greek yogurt and mix to make your "icing".  Cover the inside part of your donut halves with the strained, whole berries.  Next, cover  your donut cakes with your icing mixture.  Serve, and indulge. : )

 ***Note: If you prefer real sugar, add it before you microwave your berries so that it carmelizes with the sugars in your berries.  You can also use other sorts of cake or glazed donuts in lieu of the plain donut, though your calorie count may go up. <3
